Each entry's identifier is a hash of the previous entry's identifier joined to that entry's own canonical record. Change any figure in any earlier entry and its hash changes — and so does every hash after it, visibly, to anyone who recomputes the chain.

Each entry carries a hash computed from the previous entry's hash plus its own contents. Change any earlier entry and every hash after it stops matching, so the alteration is visible without needing a copy of the original. That is the whole mechanism, and its strength is narrow and real: it makes silent edits to history detectable by anyone who checks the chain.
It says nothing about whether an entry was true when written. A chained record of fabricated readings is internally consistent and completely worthless, and no amount of cryptography fixes that. Tamper-evidence protects the past from the publisher; it does not protect the reader from a publisher who was wrong or dishonest on the day. It is worth having for exactly one reason — it removes the easiest way to quietly improve a record after the fact — and claiming more for it than that is overselling.
You do not need to recompute anything to get most of the value. Look at whether entries exist for days where nothing interesting happened, because a record that only has entries on good days has been curated regardless of how it is hashed. Look at whether corrections appear as new entries rather than as edits to old ones. Those two properties are visible by reading, and they are what the hashing is there to protect. The cryptography makes silent editing detectable; the editorial habit of logging dull days and admitted errors is what makes the record worth protecting in the first place.
